Leftover sushi can be kept, but not for long. Refrigerate it within two hours, eat raw-fish sushi within about 24 hours, and cooked or vegetable rolls within a day or two. Here is how to store it and when to throw it out.

These times assume the sushi was fresh when you got it and went into the fridge within two hours (one hour if it was above 90 °F). FoodSafety.gov lists fresh fish at 1–2 days in the refrigerator; with sushi, the rice also dries out and hardens, so quality drops well before that.

Can I eat sushi after 48 hours or 3 days?

Raw-fish sushi that has been in a to-go box for two or three days is past the recommended window — it is safest to throw it away, even if it looks and smells fine. Cooked or vegetable sushi at 48 hours is at the edge; check it carefully and discard it if anything seems off.

How to store leftover sushi

  1. Refrigerate promptly. Within two hours of delivery or pickup — count the travel time.
  2. Wrap it tightly. Cover pieces in plastic wrap, or press wrap onto the surface, then put them in an airtight container. This slows the rice drying out and stops odours spreading.
  3. Use the coldest part of the fridge (usually the back of a lower shelf), not the door.
  4. Keep sauces separate where possible so rolls don’t turn soggy.
  5. Label it with the date and time so you know when it needs to go.

Harmful bacteria don’t always change the look or smell of food, so stick to the time limits. When in doubt, throw it out.

Can you freeze sushi?

Freezing keeps sushi safe but ruins the texture: rice turns hard and crumbly and cucumber or avocado goes watery. If you must, freeze only cooked rolls, wrap them tightly, use within a few weeks and thaw in the refrigerator, never on the counter. Freezing leftovers is generally not worth it.
